champagne and strawberries!

hello loves!

cupcakes are back! this january i wanted to make something wintry, fuzzy, and light.. so i asked my facebook friends from some idea, and m.lo took my "fuzzy" as "fizzy" and suggested champagne! ooo what brilliant idea :) i thought it would be super fun to extend the holidays and celebrations with this suggested ingredient, so i went with it.

the cupcakes actually weren't as fluffy/light as i wanted it to be. i think it's because i was missing 1 out of the 6 eggs called in the recipe and was too lazy to go out in the cold :( oh, and i didn't actually use champagne but sparkling riesling - hello, dr. L! every cornellian should know this wine



for the frosting i tried to cheat and make meringue frosting using this powder from williams sonoma, which i thought was fool-proof, but the mixture turned out kinda heavy, so instead of putting the mixture onto the cupcakes, i put it straight onto a baking sheet, and the result was actually similar to french macaroons! whee!

but i still need some frosting! what good are cupcakes with no frosting?! after scratching my head thinking of what can be done with what i already have in my kitchen, i resorted to the classic buttercream mixed with some strawberry preserves.

*not* the prettiest cupcakes i make so it's a bit disappointing, but b helped decorate and his [on the right] turned out beautiful! :) oh yea, on top is the meringue piece - i made good use out of a mistake hehe...

  1. Love this blog! I've been trying to get into making cool cupcakes like this and cakes, but of course it involves patience and time... 2 of things I don't have much of, lol. I'm hosting a baby shower in mid-Feb. and was looking to do something cute for a baby boy. Any (simple) ideas?! Do you work w/ fondant at all? Any good tutorial tools? Help!

  3. hi danielle :) thx for the follow. i tried working with fondant once but i found it more work than it's worth. u'll definitely get a good arm's work out rolling fondant! it does look pretty though - but taste-wise buttercream shall reign supreme!

  4. for a baby boy shower, i think the simplest thing to do is vanilla cake with piped, tinted blue buttercream. you can add little pearls (http://ecx.images-amazon.com/images/I/41WQynlYQmL._SS500_.jpg) and if you want to tint the pearls you can shake 'em inside a ziploc bag with a few drops of food coloring - that's how i tinted my pink ones in this post.

    or if you don't want to do cupcakes, mini pretzel sticks dipped in white chocolate (and drizzled with blue ones to make stripes) would look so pretty!!
